Method
Brought 20l up to 70F
Steeped grains for 30 mins (Carafa III for 10 - late)
Bring to boil, add LME
Start 60 min clock
At boil, added Pacific Gem
At 15 min added Cascade
At 10 min added chiller
At 5 min added mulled wine sachets + 5g Cascade

0Too light, emergency add of Carafa3. Too much water brought to boil, reduce to 18l next year.
1Taste was sweet, obviously,masking a complex maltiness. one to watch
2Vigorous fermentation and blow off.

63Good but not particularly Xmas-y. Must add more mulled wine spice next year. Went down well tho including a sloppy New Years Eve patron.
