Method
Bring 21l up to 70C
Steeped grains 30min at 66-76 for 30 minutes. Rinsed x3
Brought 20l up to boil
Added DME
Waited for hot break, added Pacific Gem. Began 60 minute clock
At 30 min added aroma Hallertauer Hersbrucker
At 10 min added chiller
At 5 min added aroma Hallertauer Hersbrucker

Pitched rehydrated yeast

36Tried a half bottle after 1 week and got a vinegar after taste so was worried. Tried one tonight and after taste is dissipating. Was quite drinkable. I was worried that as we were away on holidays it sat for 3 weeks in the cold on the yeast. I'm starting to suspect 2 weeks is optimal to lessen risk to flavour.
83Poured remainder down the sink. Definitely an off taste developed (cider/vinegar). Very disappointed. Will stick to 2 week religiously from now on.
