Brought 18l up to 70F
Steeped grains for 30 mins (rinsed twice)
Bring 18l to boil, add LME
Start 60 min clock
At boil, added Pacific Gem
At 15 min added Cascade
At 10 min added chiller
At 0 min added mulled wine sachets + 5g Cascade (dry hop)

Removed dry-hop spice and hop. Plugged in heater.

Dark green caps. Taste: had a lot of body and a good alcoholic kick. Not really the holiday nose I was going for. Also a fair amount of bitterness. Will be interesting to see with carbonation.
